Brown Sugar Cupcakes



These are so very yummy! The cupcake works well with a lot of different things, so I decided to add some surprises to the cupcakes.

I got the recipe from Yoo Eatz. They have amazing recipes; GO CHECK THEM OUT!

1 1/2 cups all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
3/4 cup brown sugar
1/2 cup granulated sugar
1/2 cup (1 stick) butter, softened
2 large eggs
1/2 tsp vanilla extract
3/4 cup milk



Preheat oven to 325ºF. In a medium-size bowl, whisk together flour, baking powder, and salt
  1. In the bowl of an electric mixer, cream together butter and sugars. Add eggs and vanilla, and beat until well-combined.
  2. Alternate adding flour mixture with milk, and beat on low until batter is smooth and just combined.
  3. Spoon into a muffin pan lined with paper cupcake liners.Add your in your 'surprises'.  Bake 18-20 minutes for regular-size cupcakes (rotate pan halfway) or 15-18 minutes for mini cupcakes (rotate after 10 minutes) until a toothpick inserted in the center of a cupcake comes out clean. Cool in pan on wire racks

Chocolate Chip Bread Pudding Cupcakes




8 slices bread cubed
1/2 cup softened butter
1/2 cup sugar
3 eggs
1/2 teaspoon vanilla
1/3 cup sour cream
1/2 cup chocolate chips (you can choose whatever add ins you'd like: apples, pumpkin, raisins, peanut butter, bananas, nuts......)

Preheat 350°

Cream butter and sugar. Add eggs one at a time and mix thoroughly. Mix in sour cream and vanilla. Stir in bread cubes making sure to break them up. Add in chocolate chips
Bake for 20-25 minutes




Usually when I make bread pudding I don't follow a recipe so I chose not to do so for these. I used 6 slices of bread but as you can see I wasn't a able to make a full 2 dozen. Also, the cupcakes came out very buttery, so I added 2 more slices to the recipe to compensate.

As for the topping, I just used a half cup of vanilla buttercream and 1 teaspoon of vanilla. You can also use a glaze.

Why so serious?!

This is by no means a serious baking blog, I wouldn't even claim to know what I am doing, it's more of a diary of my baking adventures. While I do use recipes, they are more of a starting point. Sometimes things end well and sometimes things just get messy, but I guarantee that I had fun trying. I will be posting links to the original recipe along with my take on it.
